Project Task Visibility
Would be awesome to have the option to select the default visibility of new tasks. Specifically
, it would be better to go from only me to everyone as the default.

Interesting, are you saying that it's defaulting to "only me" when the task is created? For me, it defaults a new created task to "visibility: everyone".
I think what you're looking for is this:
You can enable that under Settings > Personal Preferences > Preferences
